Pork Tea-Smoked

Smoked over tea leaves and sugar until pork takes on a deep amber, campfire aroma. About 32 minutes from fridge to table.

Ingredients

  • Salt1 tsp
  • Ginger3 cloves, crushed
  • Rice3 tbsp
  • Sugar2 tbsp
  • Sichuan Peppercorns1 tsp
  • Pork500 g, sliced
  • Peanut Oil2 tbsp
  • Rice Vinegar1, juiced
  • Jasmine Tea Leaves3 tbsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Whisk the Peanut Oil, rice vinegar juice, garlic, sichuan peppercorns and salt into a quick marinade.

    Coat the pork completely and let it sit for at least 20 minutes (overnight is even better).

    Get the grill or griddle pan screaming hot.

  4. 4

    Grill the pork in a single layer, turning once, until charred in spots and cooked through.

  5. 5

    Rest for 5 minutes, then finish with fresh cilantro and extra rice vinegar.

Chef's tip

Don't move the pork for the first 3 minutes; a proper crust releases itself.
