White Fish Tea-Smoked

Smoked over tea leaves and sugar until white fish takes on a deep amber, campfire aroma. Ready in 19 minutes including prep.

Ingredients
- Salt1 tsp
- Ginger3 cloves, crushed
- Rice3 tbsp
- Sugar2 tbsp
- Sichuan Peppercorns1 tsp
- White Fish500 g
- Peanut Oil2 tbsp
- Rice Vinegar1, juiced
- Jasmine Tea Leaves3 tbsp
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Whisk the Peanut Oil, rice vinegar juice, garlic, sichuan peppercorns and salt into a quick marinade.

Coat the white fish completely and let it sit for at least 20 minutes (overnight is even better).

Get the grill or griddle pan screaming hot.

Grill the white fish in a single layer, turning once, until charred in spots and cooked through.

Rest for 5 minutes, then finish with fresh cilantro and extra rice vinegar.
Chef's tip
Don't move the white fish for the first 3 minutes; a proper crust releases itself.
