Water Spinach Tom Kha

A clear, restorative thai soup starring water spinach — light on the palate, big on aroma. About 30 minutes from fridge to table.

Ingredients
- Saltto taste
- Garlic1, diced
- Coconut Milk400 ml
- Thai Basilsmall handful
- Shallots3 cloves, minced
- Stock or Broth1 litre
- Water Spinach400 g
- Coconut Oil1 tbsp
- Red Curry Paste1/2 tsp
- Lemongrass2 stalks
- Galangal5 slices
Instructions

Sweat the garlic in the Coconut Oil until translucent but not browned, about 5 minutes.

Add the shallots and red curry paste and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the water spinach.

Simmer gently until the water spinach is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with thai basil and a grind of black pepper.
Chef's tip
A final squeeze of lime just before serving lifts every other flavour.
