Bamboo Shoots Summer Rolls

Warm bread wrapped around savoury bamboo shoots, crunchy salad and a cool sauce — handheld happiness. About 23 minutes from fridge to table.

Ingredients
- Yogurt4 tbsp
- Saltto taste
- Tomato2, sliced
- Mint Leaves1 handful
- Bamboo Shoots300 g
- Rice Noodles100 g
- Shallots2 cloves, minced
- Flatbread or Tortillas4
- Lettuce1/2, shredded
- Coconut Oil1 tbsp
- Rice Paper12
Optional extras
- Thai Basilhandful, to finish
Instructions

Season the bamboo shoots with the garlic, salt and half the spices, then cook in the Coconut Oil until browned and juicy.

Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

Stir the yogurt with a pinch of salt and a squeeze of lime for a quick sauce.

Pile the bamboo shoots onto each bread with lettuce, tomato and the yogurt sauce.

Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.
Chef's tip
For deeper flavour, toast the red curry paste in the oil before adding anything wet.
