White Fish Grilled

White fish kissed by the grill, marinated the thai way until the smoke and spice do all the talking. About 19 minutes from fridge to table.

Ingredients

  • Honey1 tbsp
  • Salt1 tsp
  • Lime1, juiced
  • Fish Sauce2 tbsp
  • Shallots3 cloves, crushed
  • White Fish500 g
  • Coconut Oil2 tbsp
  • Red Curry Paste1 tsp
  • Lemongrass2 stalks, minced

Optional extras

  • Thai Basilhandful, to finish

Instructions

    Whisk the Coconut Oil, lime juice, garlic, red curry paste and salt into a quick marinade.

    Coat the white fish completely and let it sit for at least 20 minutes (overnight is even better).

    Get the grill or griddle pan screaming hot.

  4. 4

    Grill the white fish in a single layer, turning once, until charred in spots and cooked through.

  5. 5

    Rest for 5 minutes, then finish with thai basil and extra lime.

Chef's tip

Don't move the white fish for the first 3 minutes; a proper crust releases itself.
