Smoky grilled bamboo shoots with a bright marinade — charred edges, juicy centre, and a squeeze of lime to finish. Ready in 22 minutes including prep.

Ingredients
- Honey1 tbsp
- Salt1 tsp
- Bamboo Shoots300 g
- Lime1, juiced
- Fish Sauce2 tbsp
- Shallots3 cloves, crushed
- Coconut Oil2 tbsp
- Red Curry Paste1 tsp
- Lemongrass2 stalks, minced
Optional extras
- Thai Basilhandful, to finish
Instructions

Whisk the Coconut Oil, lime juice, garlic, red curry paste and salt into a quick marinade.

Coat the bamboo shoots completely and let it sit for at least 20 minutes (overnight is even better).

Get the grill or griddle pan screaming hot.

Grill the bamboo shoots in a single layer, turning once, until charred in spots and cooked through.

Rest for 5 minutes, then finish with thai basil and extra lime.
Chef's tip
Don't move the bamboo shoots for the first 3 minutes; a proper crust releases itself.
