'Waterfall' salad — grilled eggs sliced thin with lime, mint and toasted rice powder. Ready in 15 minutes including prep.

- Mint Leaves1 handful
- Olive Oil3 tbsp
- Eggs6
- Lime1, juiced
- Thai Basilhandful, torn
- Red Onion1/2
- Toasted Rice Powder2 tbsp
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the eggs — slice, shred or cube it so every forkful gets some.

Toss the eggs with the garlic, thai basil and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
