The working-class classic that crossed the ocean and never left — thick white fish in a shattering batter, chips thick as fingers, malt vinegar mandatory. Wrapped in paper, optionally, for the full effect.

Ingredients
- Salt2 tsp
- Vegetable Oilfor deep frying
- Potato4 large, thick cut
- All-Purpose Flour1.5 cups
- Cornstarch1/4 cup
- Baking Powder1 tsp
- White Fish500 g, thick fillets
- Black Pepper1/2 tsp
Optional extras
- Lemon1, cut in wedges
Instructions

Cut potatoes into thick chips; soak 20 minutes and dry thoroughly.

Whisk flour, cornstarch, baking powder, salt and cold water into a smooth thick batter.

Fry chips twice — blanch pale, then crisp gold at higher heat.

Dip dried fish fillets in batter; fry at 180°C till deep gold.

Salt everything heavily; serve with lemon and vinegar.
