Spain's ridged sugar batons, fried till they squeak and rolled in cinnamon while hot, with a cup of thick chocolate standing by. The ridges exist purely to hold more sugar. Correct behaviour.

Ingredients

  • Butter2 tbsp
  • Salt1/4 tsp
  • Vegetable Oilfor deep frying
  • Eggs2
  • All-Purpose Flour1 cup
  • Sugar1/2 cup, for rolling
  • Vanilla Extract1 tsp
  • Cinnamon1 tsp, ground

Optional extras

  • Dark Chocolate100 g, melted, for dipping

Instructions

    Boil water with butter, sugar and salt; dump in flour and beat to a ball.

    Beat in eggs and vanilla till smooth and pipeable.

    Pipe thick ridged strips into 190°C oil, cut with scissors.

    Fry till deep gold, turning once.

  5. 5

    Roll in cinnamon sugar immediately; serve with melted chocolate.

Chef's tip

Pipe onto paper squares and lower them in paper-first — the square releases and the churro keeps its ridges.
