
Masale Bhaat
Maharashtrian masale bhaat with goda-masala warmth, tiffin legend. The centrepiece format: spiced rice that needs nothing else on the table. Serve with raita and papad; lemon wedges on the side.
Ingredients
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Onion1, thinly sliced
- Green Chili2, slit
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Basmati Rice2 cups, rinsed and soaked 20 minutes
- Whole Garam Masala Spices2 tsp
- Green Peas1 cup
- Peanuts1/2 cup, roasted
- Mixed Vegetables1 cup, chopped
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Soak the basmati rice for 20 minutes, then drain thoroughly — wet rice turns mushy.

Warm the ghee and drop in the whole spices; the moment they sizzle and perfume the kitchen, add the onions.

Cook the onions down till sweet and bronze, add the paste and spices, and fry till the oil gleams at the edges.

Add the mixed vegetables and saute two minutes, then slide in the drained rice and turn gently to coat every grain in the masala.

Add salt and hot water, boil, then cover with a tight lid and a tawa underneath to stop scorching; steam till done and rest before serving.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
