
Matar Chaat
Delhi winter matar chaat, white peas simmered soft and spiced hard. Sweet, sour, spicy, crunchy and cold in the same mouthful — chaat logic. Perfect as an evening snack with masala chai nearby.
Ingredients
- Yogurt1 cup, whisked
- Saltto taste
- Ginger2-inch piece
- Lemon1
- Tamarind Paste2 tbsp
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
- Yellow Split Peas1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Boil, fry or toast the base component until the texture is right; cool what needs cooling so the yogurt doesn't slump.

Sweeten and salt the whisked yogurt; street stalls lean sweeter than you'd think.

Layer the cooked base, then drizzle the green and tamarind chutneys in crossing lines.

Pour the yogurt over generously, then dust with chaat masala, roasted cumin and chili powder from a height.

Finish with the chaat masala, a final pinch of black salt and serve at once.
