
Bread Rolls
Stuffed bread rolls, the birthday-party starter of small-town India. Hot oil, thick batter, monsoon weather optional — India's favourite snack format. Plate with fried green chilies and a dusting of chaat masala.
Ingredients
- Ginger Garlic Paste1 tsp

- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Potato3 medium, cubed
- Asafoetidaa pinch
- Green Peas1 cup
- Gram Flour1 cup
- Ajwain1/2 tsp
- Rice Flour2 tbsp
- Bread4 slices

Make the batter: whisk the bread with the potato, gram flour, salt and just enough water for a thick, clinging consistency.

Get the oil shimmering but not smoking; steady medium-high is the fritter zone.

Slide the batter in with two spoons — rough, craggy shapes fry crispest.

Let them take their colour slowly; deep gold means cooked centres and shattering crust.

Pile up, salt lightly, and serve with mint chutney and ketchup within arm's reach.
Chef's tip
Second-fry for 30 seconds at higher heat if feeding a crowd.
