
Girda
Kashmiri girda, sesame-topped morning bread for noon chai. Soft-centred, blistered and buttered; bread as daily ritual. Serve with any curry, dal or pickle on the table.
Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Ghee3 tbsp
- All-Purpose Flour2 cups
- Sesame Seeds1 tsp
Instructions

Mix the flour(s) with salt, then add water slowly, kneading 8-10 minutes to a soft, springy dough that springs back when poked.

Rest the dough, covered with a damp cloth, for at least 30 minutes — gluten relaxes, rolling gets easier.

Portion the dough, stuff and pinch the seams closed, then roll with a feather touch so nothing bursts.

Slap onto the hot tawa; when dark spots appear, flip and press at the edges with a cloth till it balloons.

Slather with ghee, wrap in a clean cloth, and carry to the table warm.
Chef's tip
The puff comes from steam; don't poke holes with a fork.
