Sun-dried mango magaya, the pickle that outlives summers. The condiment that carries the meal — bright, punchy and made in minutes. Spoon alongside breakfast or stir through hot rice with ghee.

Ingredients

  • Salt1 tsp
  • Fenugreek Seeds1 tsp
  • Mustard Seeds1 tsp
  • Curry Leaves1 sprig
  • Dried Red Chilies2
  • Asafoetidaa pinch
  • Tamarind Paste1 tbsp
  • Red Chili Powder1 tsp
  • Coconut Oil1 tbsp
  • Green Mango1, peeled and grated

Instructions

    Chop, measure and line up; the cooking part is over before the radio finishes a song.

    Toast the salt lightly for depth, or keep it raw for brightness — both are correct.

    Blitz the green mango with the roasted bits, tamarind and salt, adding water a spoon at a time.

    Taste and adjust — salt, sour, heat; chutney should be slightly louder than the dish it accompanies.

    Pour the crackling tadka over the chutney and leave it sitting on top like a crown.

Chef's tip

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
