Mooli Raita

Radish raita, peppery and cooling, paratha's quiet partner. The soothing counterpart every spicy plate is quietly asking for. Spoon generously; it disappears fastest of anything on the table.

Ingredients

  • Yogurt2 cups, whisked
  • Saltto taste
  • Green Chili2
  • Roasted Cumin1 tsp
  • Daikon Radish1, sliced

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Whisk the yogurt till smooth and pourable; thick curds want a spoon of milk or water.

    Prep the daikon radish — grate, chop or boil as the dish demands — and let it cool if cooked.

    Stir the daikon radish through with the spices, reserving some cumin for the top.

  4. 4

    Let it sit covered; the salt pulls the flavours together.

  5. 5

    Finish with the yogurt on top and take it to the table cold.

Chef's tip

Grated cucumber should be squeezed dry or the raita turns watery.
