Palak Raita

🇮🇳 Indian

Spinach raita with fried garlic, green and garlicky. Cool, spiced and always welcome next to something fiery. Spoon generously; it disappears fastest of anything on the table.

Prep 8 min Cook 4 min Serves 3 Easy

Ingredients

  • Yogurt2 cups, whisked
  • Saltto taste
  • Spinach300 g, chopped
  • Garlic6 cloves
  • Roasted Cumin1 tsp

Optional extras

  • Green Chili1, finely chopped
  • Fresh Cilantro2 tbsp, chopped

Instructions

  1. 1

Whisk the yogurt till smooth and pourable; thick curds want a spoon of milk or water.

  2. 2

Prep the spinach — grate, chop or boil as the dish demands — and let it cool if cooked.

  3. 3

Fold the spinach into the yogurt with roasted cumin, salt and the green chili.

  4. 4

Rest ten minutes in the fridge so the flavours get acquainted.

  5. 5

Finish with the yogurt on top and take it to the table cold.

Chef's tip

Grated cucumber should be squeezed dry or the raita turns watery.
