Pudina Ka Raita

Mint raita, green and glacier-cold. Cool, spiced and always welcome next to something fiery. Spoon generously; it disappears fastest of anything on the table.

Ingredients

  • Yogurt2 cups, whisked
  • Saltto taste
  • Green Chili2
  • Mint Leaves1/4 cup
  • Roasted Cumin1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Smooth the yogurt out; grainy raita is a texture crime.

    Prep the mint leaves — grate, chop or boil as the dish demands — and let it cool if cooked.

    Fold the mint leaves into the yogurt with roasted cumin, salt and the green chili.

  4. 4

    Chill briefly; cold raita on a hot day is a small mercy.

  5. 5

    Garnish with the yogurt and a final pinch of roasted cumin.

Chef's tip

Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
