Gongura Chicken

🇮🇳 Indian

Andhra sorrel-leaf chicken, sour greens against fiery masala. Slow-fried masala meets quick-cooking chicken — timing is everything. Best with steamed rice and a cooling raita.

Reduce to your preferred consistency, rest five minutes, and finish with the onion and cilantro.

Chef's tip

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
