Mackerel fry, rava-coated and lemon-drenched, Konkan lunch standard. Fried fish done the way the coast intended. Classic plate: fried fish, onion rings, lemon, green chutney.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Saltto taste
  • Green Chili2
  • Turmeric Powder1/2 tsp
  • Lemon1
  • Red Chili Powder1-2 tsp
  • Mustard Oil4 tbsp, for shallow frying
  • Mackerel4, cleaned and scored
  • Semolina (Rava)1 cup

Instructions

    Wash and pat the fish absolutely dry; score the flesh and rub with lemon, salt and turmeric.

    Marinate 30 minutes with the semolina (rava), ginger garlic paste, chili and spices.

    Dredge the fish in the coarse coating, pressing hard so it clings to every edge.

    Fry undisturbed till the underside releases on its own, then turn once; crisp and gold.

    Eat immediately, straight from the rack if no one is watching.

Chef's tip

Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
