
Suran Aur Curd ki Bhaaji
Yam cubes mellowed in a light yogurt masala, the Konkani way with suran. A one-pan weeknight sabzi that asks for little and gives a lot. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili2
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Red Chili Powder1 tsp
- Yam300 g, cubed
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash and cut the yam into even, bite-size pieces so everything cooks at the same pace.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Add the yam and the yogurt, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
