
Soya Chaap Masala
Soya chaap in a creamy tomato-cashew gravy, the Delhi dhaba vegetarian showstopper. A proper gravy curry — the kind that demands something bread-shaped for mopping. Ladle over steamed rice with sliced onions on the side.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Kasuri Methi1 tbsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Soya Chunks1 cup, boiled
- Cashews1/4 cup
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Heat oil in a heavy pot and brown the onions deeply — this patience is the whole flavour base.

Stir in the ginger garlic paste and cook a full two minutes.

Add the tomato with turmeric, chili and coriander powder; fry till the masala darkens and splits.

Turn the soya chunks through the masala with the yogurt, add warm water and bring to a gentle simmer.

Swirl in cream or a spoon of whisked yogurt off the flame, then shower with cilantro.
Chef's tip
Blend half the gravy and stir it back for body without cream.
