Methi Malai Paneer Style Tofu
Tofu in a fenugreek-cream sauce, the vegan cousin of methi malai paneer. Restaurant comfort, home kitchen effort — the masala does the heavy lifting. Serve with jeera rice or flaky parathas.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Heavy Cream1/4 cup
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Fenugreek Seeds1 tsp
- Tofu250 g, cubed
- Cashews1/4 cup
- Red Chili Powder1 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Soften the onions over medium heat till they slump and turn bronze at the edges.

Stir in the ginger garlic paste and cook a full two minutes.

Cook the tomato down into the spices, wetting with water a spoon at a time, to a thick red masala.

Add the tofu with the heavy cream, coat well, pour in hot water to just cover and simmer till tender.

Finish with garam masala, a crush of kasuri methi and fresh cilantro; rest five minutes off the heat.
Chef's tip
Blend half the gravy and stir it back for body without cream.
