
Papad ki Sabzi
Roasted papad broken into quick yogurt curry, the Rajasthani five-minute sabzi. A proper gravy curry — the kind that demands something bread-shaped for mopping. Best with buttered rotis and a cold kachumber salad.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Kasuri Methi1 tbsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Gram Flour1 cup
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Fry the onions with a pinch of salt till deep golden; eight to ten minutes, and worth every one.

Add ginger garlic paste and green chili; stir till the raw smell disappears.

Cook the tomato down into the spices, wetting with water a spoon at a time, to a thick red masala.

Stir in the gram flour and yogurt, saute five minutes, then add hot water and cook covered until done.

Kill the heat and let it sit; finish with cilantro and a squeeze of lemon at the table.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
