
Dahi Poha
Poha soaked in seasoned yogurt, the summer breakfast of Karnataka homes. The 20-minute breakfast that has fed half a billion mornings. Plate with a wedge of lemon and extra fried curry leaves.
Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Onion1, finely chopped
- Ginger2-inch piece
- Green Chili2, slit
- Turmeric Powder1/4 tsp
- Vegetable Oil2 tbsp
- Mustard Seeds1 tsp
- Curry Leaves2 sprigs
- Lemon1/2
- Flattened Rice (Poha)2 cups, thick variety
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dry-roast the flattened rice (poha) (if using rava or vermicelli) till nutty and just golden; set aside. Flattened rice needs only a rinse and drain.

Splutter mustard seeds, tip in the curry leaves and chilies, and let the oil get fragrant.

Sweat the onions down, stir in ginger, and let the rawness cook off.

Tumble in the yogurt and the flattened rice (poha), sprinkle salt, and toss everything through the fragrant oil.

Rest covered off the heat for five minutes, fluff, and top with the ginger and a hard squeeze of lemon.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
