Fox-nut chaat with yogurt drizzle, the fasting-friendly upgrade of modern chaat houses. The plate where India keeps all of its favourite textures at once. Eat at once — chaat has a five-minute window of glory.

Ingredients

  • Yogurt2 cups, whisked
  • Saltto taste
  • Tamarind Paste2 tbsp
  • Chaat Masala1 tsp
  • Red Chili Powder1/2 tsp
  • Roasted Cumin1 tsp
  • Makhana (Fox Nuts)1 cup

Optional extras

  • Fresh Cilantro2 tbsp, chopped
  • Pomegranate Seeds1/2 cup

Instructions

    Prep the crunchy and the soft components in separate bowls; assembly takes four minutes flat.

    Beat the yogurt till pourable and gloss-free; lumpy yogurt ruins an otherwise perfect chaat.

    Spread the base out flat and drag both chutneys across it in ribbons.

    Pour the yogurt over generously, then dust with chaat masala, roasted cumin and chili powder from a height.

    Bury it under the yogurt, add the jewelled garnish, and get it to the table while everything still crackles.

Pomegranate isn't decoration — the bursts of juice matter.
