
Tandoori Roti Aur Butter
Tandoor-style roti blistered on the stove, the dhaba bread with butter slabs. Flour, water, heat and hands — the oldest bread tradition on earth. Pile in a basket lined with cloth and let everyone grab.
Ingredients
- Yogurt2 cups, whisked
- Butter3 tbsp
- Salt1 tsp
- Ghee2 tbsp
- Wheat Flour3 cups
Instructions

Mix the flour(s) with salt, then add water slowly, kneading 8-10 minutes to a soft, springy dough that springs back when poked.

Rest the dough, covered with a damp cloth, for at least 30 minutes — gluten relaxes, rolling gets easier.

Shape each ball, flatten, and either roll plain or enclose a spoonful of filling and roll with the seam down.

Cook on a hot tawa till brown blisters form, flip, then finish over an open flame (or in the pan with ghee) till it puffs.

Finish with a slick of butter and eat while the first one is still steaming.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
