
Bombil Fry Bombay Duck
Bombay-duck fillets rava-crusted and shallow fried, the Maharashtra coast's crunchy bar snack. Semolina crust, fierce marinade, zero fuss. Best with a squeeze of lime and cold weather.
Ingredients
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Green Chili2
- Turmeric Powder1 tsp
- Lemon1
- Fish500 g, steaks
- Red Chili Powder1-2 tsp
- Mustard Oil4 tbsp, for shallow frying
- Semolina (Rava)1 cup
Instructions

Wash and pat the fish absolutely dry; score the flesh and rub with lemon, salt and turmeric.

Coat with the semolina (rava) and spices and let it sit — 30 minutes minimum.

Mix the coating: semolina or rice flour with a pinch of chili; press it onto the fish on all sides.

Fry undisturbed till the underside releases on its own, then turn once; crisp and gold.

Eat immediately, straight from the rack if no one is watching.
Chef's tip
If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
