Jaljeera with mint and boondi float, the Ganga-ghat summer cooler. Cold, sweet-scented relief from an Indian summer. Best on a veranda in May, frankly.

Ingredients

  • Mint Leaves1/4 cup
  • Sugar2 tbsp
  • Tamarind Paste2 tbsp
  • Chaat Masala1 tsp
  • Roasted Cumin1 tsp
  • Green Cardamom2, ground

Instructions

    Chill everything first — glasses, liquid, the works — cold is the texture.

    Combine the tamarind paste with the mint leaves in a blender or bowl.

    Blend or whisk until smooth and slightly frothy; taste for sweetness.

    Add the roasted cumin and pulse once — enough to scent, not to shred.

    Pour over ice if using, dust with the garnish, and serve immediately in tall glasses.

Chef's tip

If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
