Zucchini Chocolate Cake
Shredded zucchini melts into the crumb, the garden-glut cake disguised as dessert. A tender, bakery-style crumb that stays moist for days. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter1/2 cup, softened
- Salta pinch
- Eggs3
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Zucchini2, diced
- Brown Sugar1/2 cup
- Cocoa Powder1/2 cup
- Chocolate Chips1 cup
Instructions
- 1
Preheat the oven to 175 C / 350 F, grease the tin and dust it so nothing sticks later.
- 2
Cream the butter, sugar and chocolate chips together until the mixture turns several shades lighter.
- 3
Alternate the dry ingredients with the milk, folding with a spatula so the batter stays airy.
- 4
Bake in the middle of the oven for 30-35 minutes; cool in the tin for ten before turning out.
- 5
Level the top, pile on the frosting, and let it rest ten minutes before slicing.
