Crispy fried chicken bites in a sticky sweet-tart orange glaze — the mall food-court legend, homemade and louder.

Ingredients
- Chicken600 g cubed
- Salt1 tsp
- Garlic3 cloves minced
- Ricefor serving
- Eggs1
- Soy Sauce3 tbsp
- Cornstarch1/2 cup + 1 tbsp
- Sugar1/4 cup
- Rice Vinegar2 tbsp
- Neutral Oilfor frying
- Orange1 juiced + zest
Optional extras
- Spring Onions2, sliced
- Broccoli2 cups steamed
- Chili Flakes1/2 tsp
Instructions

Cube chicken; toss with salt, egg and cornstarch.

Fry in hot oil until golden and crisp; drain.

Simmer orange zest/juice, soy, sugar, rice vinegar, garlic and chili flakes into a glossy sauce; thicken with cornstarch slurry.

Toss chicken in the sauce until lacquered.

Serve over rice with broccoli.
Chef's tip
Sauce the chicken right before serving so the crust stays crunchy.
