A vegetarian Indian dish in the spirit of Rajkot cooking — Malai Pulusu Bamboo Shoot brings a malai touch with a classic pulusu finish. About 45 minutes from fridge to table.

Ingredients

  • Garam Masala1/2 tsp
  • Heavy Cream1/3 cup
  • Cumin Seeds1 tsp
  • Bamboo Shoots250 g, chopped
  • Cashews10, soaked

Optional extras

  • Ghee1 tbsp
  • Curry Leaves1 sprig
  • Lemon1/2

Instructions

    Soak or rinse dals/grains if the dish uses them.

    Pressure-cook or simmer the base until soft.

    Prepare a tempering of ghee, cumin, garlic, and chili.

    Pour tempering over the cooked base.

    Simmer briefly to marry flavours.

    Mash lightly if desired; garnish with cilantro.

    Serve with rice or roti.
