
Saffron Pasanda Corn
A vegetarian Indian dish in the spirit of Bhubaneswar cooking — Saffron Pasanda Corn brings a saffron touch with a classic pasanda finish. About 40 minutes from fridge to table.
Ingredients
- Tomato2, chopped
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Saffrona pinch
- Milk2 tbsp, warm
- Corn250 g, chopped

- Green Chili1-2, slit
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Rest a minute, then serve hot.
Chef's tip
Serve hot with roti, rice, or soft paratha.
