A vegetarian Indian dish in the spirit of Kodaikanal cooking — Kodaikanal Home-Style Toor Dal Chutney brings a bhuna touch with a classic chutney finish. About 45 minutes from fridge to table.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Saltto taste
  • Vegetable Oil2 tbsp
  • Yellow Lentils (Toor Dal)1 cup, rinsed
  • Red Chili Powder1 tsp

Optional extras

  • Green Chili1-2, slit
  • Ghee1 tbsp
  • Fresh Cilantro2 tbsp, chopped

Instructions

    Soak or rinse dals/grains if the dish uses them.

    Pressure-cook or simmer the base until soft.

  3. 3

    Prepare a tempering of ghee, cumin, garlic, and chili.

    Pour tempering over the cooked base.

    Simmer briefly to marry flavours.

    Mash lightly if desired; garnish with cilantro.
