
Puri Methi Jhinga Vepudu
A non-vegetarian Indian dish in the spirit of Puri cooking — Puri Methi Jhinga Vepudu brings a methi touch with a classic vepudu finish. About 40 minutes from fridge to table.
Ingredients
- Ginger Garlic Paste1 tbsp
- Kasuri Methi2 tsp
- Saltto taste
- Tomato2, chopped
- Cumin Seeds1 tsp
- Vegetable Oil2 tbsp
- Prawns350 g, cleaned

- Curry Leaves1 sprig
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Rest a minute, then serve hot.

Finish with a spoon of ghee for shine and aroma.
