Mangalore Honey Gongura

A vegetarian Indian dish in the spirit of Mangalore cooking — Mangalore Honey Gongura brings a honey touch with a classic rogan josh finish. About 42 minutes from fridge to table.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Tomato2, chopped
  • Vegetable Oil2 tbsp
  • Jaggery1 tbsp
  • Gongura (Sorrel Leaves)250 g, chopped

Optional extras

  • Green Chili1-2, slit

Instructions

    Marinate the main ingredient with turmeric, chili, and salt for 15 minutes.

    Heat oil; fry or sear until lightly coloured, then set aside.

  3. 3

    In the same pan, saute aromatics and spices.

  4. 4

    Return the main ingredient; add gravy ingredients.

    Simmer covered until tender.

    Reduce to coat; finish with herbs or cream if using.

  7. 7

    Serve immediately.
