A vegetarian Indian dish in the spirit of Noida cooking — Poha Toor Chutney brings a toor touch with a classic chutney finish. About 37 minutes from fridge to table.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Onion1, finely chopped
  • Vegetable Oil2 tbsp
  • Red Chili Powder1 tsp
  • Flattened Rice (Poha)2 cups

Optional extras

  • Green Chili1-2, slit
  • Curry Leaves1 sprig

Instructions

    Soak or rinse dals/grains if the dish uses them.

    Pressure-cook or simmer the base until soft.

  3. 3

    Prepare a tempering of ghee, cumin, garlic, and chili.

    Pour tempering over the cooked base.

    Simmer briefly to marry flavours.

    Mash lightly if desired; garnish with cilantro.

    Serve with rice or roti.

Keep the flame medium — rushing browns the base too fast.
