
Hisar Smoky Spring Onion Sabzi
A vegetarian Indian dish in the spirit of Hisar cooking — Hisar Smoky Spring Onion Sabzi brings a smoky touch with a classic sabzi finish. About 47 minutes from fridge to table.
Ingredients
- Ginger Garlic Paste1 tbsp
- Kasuri Methi1 tsp
- Tomato2, chopped
- Ghee2 tbsp
- Vegetable Oil2 tbsp
- Spring Onions250 g, chopped
Optional extras
- Fresh Cilantro2 tbsp, chopped

Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Rest a minute, then serve hot.
