A vegetarian Indian dish in the spirit of Alwar cooking — Alwar Carrot Stir Fry brings a lahori touch with a classic stir fry finish. About 35 minutes from fridge to table.

Ingredients

  • Onion1, finely chopped
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Carrot250 g, chopped
  • Red Chili Powder1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped
  • Curry Leaves1 sprig
  • Lemon1/2

Instructions

    Soak or rinse dals/grains if the dish uses them.

    Pressure-cook or simmer the base until soft.

  3. 3

    Prepare a tempering of ghee, cumin, garlic, and chili.

    Pour tempering over the cooked base.

    Simmer briefly to marry flavours.

    Mash lightly if desired; garnish with cilantro.

    Serve with rice or roti.
