A non-vegetarian Indian dish in the spirit of Araku cooking — Araku Zafrani Mutton Kuzhambu brings a zafrani touch with a classic kuzhambu finish. About 75 minutes from fridge to table.

Ingredients

  • Garam Masala1/2 tsp
  • Onion1, finely chopped
  • Coriander Powder1 tsp
  • Saffrona pinch
  • Milk2 tbsp
  • Mutton500 g, on the bone

Optional extras

  • Green Chili1-2, slit
  • Curry Leaves1 sprig

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

    Add the main ingredient with a splash of water; cover and simmer.

    Uncover, adjust salt and spice, and cook to the desired consistency.

Chef's tip

Finish with a spoon of ghee for shine and aroma.
