
Dum Style Snapper Pongal
A non-vegetarian Indian dish in the spirit of Thanjavur cooking — Dum Style Snapper Pongal brings a dum style touch with a classic pongal finish. About 40 minutes from fridge to table.
Ingredients
- Onion1, finely chopped
- Tomato2, chopped
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Snapper450 g, steaks
Optional extras
- Ghee1 tbsp
- Lemon1/2
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Rest a minute, then serve hot.
Chef's tip
A splash of water loosens a tight masala without dulling flavour.
