A vegetarian Indian dish in the spirit of Yamunanagar cooking — Yamunanagar Chana Pickle brings a pickle touch with a classic kurma finish. About 35 minutes from fridge to table.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Onion1, finely chopped
  • Chickpeas1 cup, soaked
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Red Chili Powder1 tsp

Optional extras

  • Green Chili1-2, slit
  • Fresh Cilantro2 tbsp, chopped

Instructions

    Assemble spices and chop vegetables before lighting the stove.

    Temper mustard seeds, curry leaves, and dried chilies in oil.

    Add onion and green chili; saute until soft.

    Stir in the main ingredient and powdered spices.

    Cook covered, stirring occasionally, until done.

    Squeeze lemon or fold in coconut if the style calls for it.

    Adjust seasoning and serve.
