A vegetarian Indian dish in the spirit of Alwar cooking — Methi Karela Seekh brings a methi touch with a classic seekh finish. About 45 minutes from fridge to table.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Kasuri Methi2 tsp
  • Red Chili Powder1 tsp
  • Bitter Gourd250 g, chopped

Optional extras

  • Green Chili1-2, slit
  • Ghee1 tbsp
  • Fresh Cilantro2 tbsp, chopped

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

    Add the main ingredient with a splash of water; cover and simmer.

    Uncover, adjust salt and spice, and cook to the desired consistency.

    Finish with garam masala and fresh cilantro.

Chef's tip

Finish with a spoon of ghee for shine and aroma.
