A vegetarian Indian dish in the spirit of Karwar cooking — Karwar Sabudana Nimbu brings a nimbu touch with a classic pulusu finish. About 35 minutes from fridge to table.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Saltto taste
  • Tomato2, chopped
  • Lemon2
  • Red Chili Powder1 tsp
  • Sago (Sabudana)1 cup, soaked

Optional extras

  • Green Chili1-2, slit
  • Ghee1 tbsp

Instructions

    Heat oil or ghee in a heavy kadhai over medium heat.

    Add cumin or mustard seeds and let them crackle.

    Saute onion until golden, then stir in ginger-garlic paste.

    Add tomatoes and powdered spices; cook until oil separates.

    Add the main ingredient with a splash of water; cover and simmer.

    Uncover, adjust salt and spice, and cook to the desired consistency.

    Finish with garam masala and fresh cilantro.

Chef's tip

Finish with a spoon of ghee for shine and aroma.
