Tuna Yakiniku

Tuna kissed by the grill, marinated the japanese way until the smoke and spice do all the talking. About 19 minutes from fridge to table.

Ingredients

  • Salt1 tsp
  • Ginger3 cloves, crushed
  • Soy Sauce3 tbsp
  • Sesame Oil2 tbsp
  • White Pepper1 tsp
  • Tuna500 g, sashimi-grade
  • Rice Vinegar1, juiced
  • Neutral Oil2 tbsp
  • Asian Pear1/2, grated

Optional extras

  • Shiso Leaveshandful, to finish

Instructions

    Whisk the Neutral Oil, rice vinegar juice, garlic, white pepper and salt into a quick marinade.

    Coat the tuna completely and let it sit for at least 20 minutes (overnight is even better).

    Get the grill or griddle pan screaming hot.

  4. 4

    Grill the tuna in a single layer, turning once, until charred in spots and cooked through.

  5. 5

    Rest for 5 minutes, then finish with shiso leaves and extra rice vinegar.

Chef's tip

Don't move the tuna for the first 3 minutes; a proper crust releases itself.
