Burdock Root Yakiniku

Burdock root kissed by the grill, marinated the japanese way until the smoke and spice do all the talking. 22 minutes of mostly hands-off cooking.

Ingredients
- Salt1 tsp
- Ginger3 cloves, crushed
- Soy Sauce3 tbsp
- Sesame Oil2 tbsp
- White Pepper1 tsp
- Rice Vinegar1, juiced
- Neutral Oil2 tbsp
- Burdock Root2
- Asian Pear1/2, grated
Optional extras
- Shiso Leaveshandful, to finish
Instructions

Whisk the Neutral Oil, rice vinegar juice, garlic, white pepper and salt into a quick marinade.

Coat the burdock root completely and let it sit for at least 20 minutes (overnight is even better).

Get the grill or griddle pan screaming hot.

Grill the burdock root in a single layer, turning once, until charred in spots and cooked through.

Rest for 5 minutes, then finish with shiso leaves and extra rice vinegar.
Chef's tip
Don't move the burdock root for the first 3 minutes; a proper crust releases itself.
