A vegetarian Indian dish in the spirit of Anantapur cooking — Banjara Kovakkai Rasam brings a banjara touch with a classic rasam finish. About 40 minutes from fridge to table.

Ingredients

  • Garam Masala1/2 tsp
  • Onion1, finely chopped
  • Cumin Seeds1 tsp
  • Turmeric Powder1/2 tsp
  • Red Chili Powder1 tsp
  • Ivy Gourd (Kovakkai)250 g, chopped

Optional extras

  • Fresh Cilantro2 tbsp, chopped
  • Lemon1/2

Instructions

    Assemble spices and chop vegetables before lighting the stove.

    Temper mustard seeds, curry leaves, and dried chilies in oil.

    Add onion and green chili; saute until soft.

    Stir in the main ingredient and powdered spices.

    Cook covered, stirring occasionally, until done.

    Squeeze lemon or fold in coconut if the style calls for it.

    Adjust seasoning and serve.

A splash of water loosens a tight masala without dulling flavour.
