Salmon Yakitori

Marinated chunks of salmon on skewers, charred over high heat and showered with herbs. About 24 minutes from fridge to table.

Ingredients
- Yogurt3 tbsp
- Ginger3 cloves, crushed
- Soy Sauce3 tbsp
- White Pepper1 tsp
- Sugar1 tbsp
- Rice Vinegar1, juiced
- Neutral Oil2 tbsp
- Mirin3 tbsp
- Salmon500 g fillets
Optional extras
- Shiso Leaveshandful, to finish
Instructions

Whisk the yogurt, neutral oil, garlic, white pepper and rice vinegar juice into a marinade.

Cut the salmon into even 3 cm chunks and coat well; marinate 30 minutes minimum.

Thread onto skewers with a little space between pieces so the heat can circulate.

Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

Slide off the skewers, rest 3 minutes, and dust with shiso leaves.
Chef's tip
For deeper flavour, toast the white pepper in the oil before adding anything wet.
