Kabocha Pumpkin Yakitori

Fire-kissed skewers of kabocha pumpkin — smoky outside, juicy inside, gone in minutes. Ready in 27 minutes including prep.

Ingredients
- Yogurt3 tbsp
- Ginger3 cloves, crushed
- Soy Sauce3 tbsp
- White Pepper1 tsp
- Sugar1 tbsp
- Rice Vinegar1, juiced
- Neutral Oil2 tbsp
- Mirin3 tbsp
- Kabocha Pumpkin500 g
Optional extras
- Shiso Leaveshandful, to finish
Instructions

Whisk the yogurt, neutral oil, garlic, white pepper and rice vinegar juice into a marinade.

Cut the kabocha pumpkin into even 3 cm chunks and coat well; marinate 30 minutes minimum.

Thread onto skewers with a little space between pieces so the heat can circulate.

Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

Slide off the skewers, rest 3 minutes, and dust with shiso leaves.
Chef's tip
A final squeeze of rice vinegar just before serving lifts every other flavour.
