A non-vegetarian Indian dish in the spirit of Mangalore cooking — Mangalore Special Duck Salna brings a pickle touch with a classic salna finish. About 60 minutes from fridge to table.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Vegetable Oil2 tbsp
  • Red Chili Powder1 tsp
  • Duck600 g, jointed

Optional extras

  • Green Chili1-2, slit

Instructions

    Soak or rinse dals/grains if the dish uses them.

    Pressure-cook or simmer the base until soft.

  3. 3

    Prepare a tempering of ghee, cumin, garlic, and chili.

    Pour tempering over the cooked base.

    Simmer briefly to marry flavours.
