
Alwar Special Goat Biryani
A non-vegetarian Indian dish in the spirit of Alwar cooking — Alwar Special Goat Biryani brings a dahi-wali touch with a classic biryani finish. About 70 minutes from fridge to table.
Ingredients
- Yogurt1 cup, whisked
- Saltto taste
- Tomato2, chopped
- Coriander Powder1 tsp
- Vegetable Oil2 tbsp
- Red Chili Powder1 tsp
- Goat500 g, on the bone

- Ghee1 tbsp
Instructions

Heat oil or ghee in a heavy kadhai over medium heat.

Add cumin or mustard seeds and let them crackle.

Saute onion until golden, then stir in ginger-garlic paste.

Add tomatoes and powdered spices; cook until oil separates.

Add the main ingredient with a splash of water; cover and simmer.

Uncover, adjust salt and spice, and cook to the desired consistency.

Finish with garam masala and fresh cilantro.

Rest a minute, then serve hot.
